Chiaretto converted to sparkling wine using the Charmat method, tradition becomes brut rosé.

Vinification:Brief cold maceration on the skins, soft pneumatic pressing, static must decantation, temperature-controlled fermentation with selected yeasts, re- fermentation using the long Charmat method.
